"Fuji to Hood" is an international collaborative festival that bridges the craft beer cultures of Japan and Oregon. Held alternately in Portland and Japan, the event features 25 pairs of breweries and cideries from both countries collaborating through the medium of craft beer. Naturally, our editor-in-chief traveled to the U.S. to bring back firsthand accounts and insights to Japan.

Bauman's Cider x Himitsu Beer: Kumquat Sunset →キンカン
Exhilarating and zesty, notes of kumquats, grapefruit, and dreams coming true. 6.4%
Binary Brewing x Repubrew: Fushigidane IPA →抹茶(Matcha)
When hops and tea meet the flavor has potential for powerful evolution! Strawberry character from Strata hops and matcha tea umami do a leaf dance to create a strange experience in this West Coast IPA. 7%
Block 15 Brewing x Y. Market Brewing: Aka Fuji Sake of You →麹(Koji)
Red Rice Koji Lager. Brewed with Japanese Akakome (Red Rice), koji, and NW Pilsner malts and co-fermented with Sake and lager yeast.
Boneyard Beer x Ise Kadoya Brewery: Pacific Handshake →かぼす(Kabosu)
Pacific Handshake brings together Boneyard and Japan’s Isekado Brewery in a cross-ocean collaboration. This Rice Lager is a meeting point between tradition and modern craft. Crisp and dry, Kabosu then adds layered citrus character. Bridging lime and grapefruit, with a gentle, rounded acidity that keeps it bright, clean, and zesty. 4.8%
Breakside Brewing x Yoho Brewing: Salted Watermelon Koji Rice Lager →麹・甘酒(Watermelon Amazake)
A co-fermentation of salted watermelon amazake and traditional rice lager. Our housemade watermelon amazake uses the WHOLE melon, rind and all for an authentic true-to-fruit flavor. Available on its own or try the 'sweet and funky' version with a float of one of our infused, flavored amazakes (fennel, green tea, and pine nut).
Buoy Beer x Baeren Beer: Onigiri Pils
In collaboration with Baeren Beer of Morioka, Japan, this Czech‑style Pilsner honors the shared flagship style of both breweries—crisp, balanced, and rooted in tradition with a thoughtful twist. Brewed with Hitomebore rice and Noda sea salt from the Morioka region, alongside white sesame seeds, this beer is inspired by the flavors of onigiri, a Japanese rice ball. These elements come together in a clean, refreshing pilsner with subtle depth and a toasty finish, woven into a classic Czech Pilsner framework. 5.4%

A dry, hop-forward West Coast IPA using a combination Murakami Seven and Idaho 7 hops. 6.5%

Light and delicate Koji rice lager, soft mouthfeel, gentle rice umami, floral spice aromatics. 5%

West Coast Pale Ale made with Rice, Comet hops, Waimea Hops, Ramosa Hops, Anchovy Goo, and Pineapple Express terpenes. 5.8%
Gigantic Brewing x Uchu Brewing: Shoot the Universe →日本産杉(Japanese Cedar)
A blend of barrel aged barley wine and imperial stout, all aged with additional Japanese cedar. 14%
Heater Allen Brewing x Heiwa Craft Brewing: Sugitaru Lager →日本産杉(Japanese Cedar)
A cedar-aged rice lager in collaboration with Haiwa Craft Brewing in Kainan, Wakayama Japan. An "Exceedingly-Dry" rice lager lightly hopped and lagered in horizontal tanks with Japanese cedar. 4.9%
Hopworks Brewery x Fukuoka Craft: Kabosu-cha →カボス(Kabosu)
Kabosu-cha is a citrus-infused syrup made with the Kabosu citrus, which is native to Kyushu island in southern Japan, and is used as a base for hot tea or mixed with soda water or shochu distilled spirits. In this collaborative brew between Hopworks and Fukuoka Craft Brewing, who hail from Kyushu, the unique flavor of Kabosu from southern Japan has been combined with Japanese rice and local Oregon honey together into an extra pale ale. This crisp, easy-drinking brew will surprise you with lingering notes of citrus and floral aromas of honey. 6%

Belgian style sour beer with Osmanthus flowers and stonefruit. 5.6%
Little Hop Brewing x Yokohama Beer: Cold Sake IPA
Dry finish with mild sake flavor and mouth feel. Bright and hoppy. 6.5%
Migration Brewing x Shonan Beer: Yuzu Umi-Cha Pilsner
Bright, crisp, and deceptively complex, the Yuzu Umi-Cha reimagines the classic German Pilsner. Built on a foundation of premium pilsner malt and noble hops, this brew delivers the sharp, clean snap you expect from the style. However, the experience is elevated by the addition of vibrant Yuzu and premium green tea. 4.8%

Portland Cider Co. x Son of the Smith Hard Cider: Lavender Smoke
This barrel-smoked apple cider is infused with lavender, rosemary, and chamomile, combining a rich, smoky undertone with a bright floral finish. 7%

SteepleJack Beer x Harvest Moon: Tobishokunin
Session IPA with rice, dry hopped with Luminosa, Crystal, Dolcita, and Citra Hyperboost for a tropical citrus flavor, backed with subtle pine. 5.30%
Threshold Brewing x Teenage Brewing: Yama Haze →酒粕
Hazy IPA featuring the Japanese ingredient sake kasu (sake lees). Pressed lees is a byproduct left from sake production. It provides fruity notes and a smooth mouthfeel, complementing the fruity and juicy hops used in our hazy IPA. 7%
Von Ebert Brewing x Totopia Brewery: Halophile →八丁味噌
Made in collaboration with Totopia Brewing in Aichi, Japan and Von Ebert Brewing, this gose-style ale showcases Hatcho Red Miso to bring out the funky flavors of an Aichi specialty on a clean, crisp and lightly tart base. Brewed to bring together the salty and sour flavors of a traditional gose with the umami funk of traditional regional miso. 5%
Wolves & People Farmhouse Brewery x North Island Beer: Kaizen Rouge
This is a grisette brewed with pilsner malt, red and white wheat, some oats, fermented with our wild yeast with haskap fruit and hopped with Sorachi Ace. 4.7%
ハイライト(黄色アンダーライン)に示した通り、麹、山椒、かぼす、キンモクセイ、日本産杉、酒粕、味噌など、日本ならではの素材がオレゴンのブルワーの発想によって表現されていた。

『会場には日本からも数十名のクラフトビールファンが参加。海を越えてこのイベントのためにアメリカを訪れ、現地のブルワリーやビールファンと交流し、一緒に乾杯を交わしました。その姿は、クラフトビールが国境や言葉を超えて人と人をつなぐ文化であることを改めて感じさせてくれました。そしてFuji to Hoodを通じて、日本とアメリカのブルワリーは、単なるビジネスパートナーではなく、お互いを尊敬し、刺激し合える「親友」のような関係へとさらに深まりました。』と締めくくり、改めて「文化」の重要性を訴えた。
次回は2027年、日本・東京で開催が既にスケジュールされている。
